Things to be taken care of while making mashed potatoes:

  • Use the right type of potatoes with high starch content like Russets or Yukon Golds.
  • Start with cold water. Placing the potatoes in the hot water in the beginning itself increases chances of uneven cooking.
  • Do not add cold butter and cream to the potatoes. First heat the butter and cream and then add the mixture to the potatoes.
  • Do not overwork the potatoes: When potatoes are mashed they release starch. The more you work the potatoes the more starch is released. When too much starch is released it makes the potatoes gummy, gluey and unappetizing.
